Andhra Biryani: Why Pot Biryani is Different from the Rest

Biryani is India's most beloved dish. But not all biryanis are equal — and Andhra Biryani, especially the Pot Biryani style, stands in a class of its own.

What Makes Andhra Biryani Different?

Andhra Pradesh has its own distinct biryani tradition, separate from Hyderabadi or Lucknowi styles. The key differences are:

Spice level: Andhra biryani is significantly spicier. The masala is bold, with generous use of red chillies, black pepper, and fresh green chillies.

Cooking method: Traditional Andhra biryani is cooked in a single pot (the kacchi method), where raw marinated meat and partially cooked rice are layered and slow-cooked together. The meat juices infuse the rice from below, creating a depth of flavour that is impossible to achieve any other way.

Aromatics: Andhra biryani uses a heavier hand with whole spices — star anise, kalpasi (stone flower), marathi mokku (dried flower pods), and bay leaves. These are not common in other biryani styles but are essential to the Andhra flavour profile.

Accompaniments: Served with mirchi ka salan (green chilli curry), raita, and a boiled egg — the complete Andhra biryani experience.

The Pot Biryani Method at Manvitha

Our Pot Biryani is cooked in traditional clay pots, sealed with dough to trap steam. This is the authentic dum method — slow cooking over a wood fire for 45–60 minutes.

The clay pot does something a steel vessel cannot: it breathes. Moisture escapes slowly through the porous walls, concentrating the flavours inside. The rice grains stay separate and long, each one carrying the aroma of the masala.

The Marinade

Our mutton or chicken is marinated for a minimum of 4 hours in:

  • Fresh yoghurt from our farm
  • In-house ground biryani masala (a blend of 22 spices, ground fresh daily)
  • Ginger-garlic paste
  • Fried onions (birista)
  • Fresh mint and coriander
  • Saffron soaked in warm milk

This marinade is the foundation of the biryani's flavour. We do not rush it.

The Rice

We use aged Basmati rice — minimum 2 years old. Aged rice has lower moisture content, which means each grain cooks separately and does not clump. It is parboiled with whole spices, salt, and a squeeze of lemon before layering.

The Dum

Once layered, the pot is sealed with dough and placed over a slow flame. A heavy iron tawa is placed under the pot to distribute heat evenly. The biryani cooks undisturbed for 45 minutes.

When the seal is broken at the table, the steam that escapes carries the full aroma of the biryani — saffron, fried onions, fresh mint, and slow-cooked meat. This moment is half the experience.

Our biryani is prepared fresh every day and is available from 12:00 PM onwards. On weekends and public holidays, we recommend arriving by 1:00 PM as the Pot Biryani often sells out by 3:00 PM.
