If there is one dish that defines the soul of Andhra Pradesh, it is Gongura Mutton. Tangy, fiery, and deeply aromatic — this is not just food. It is a memory, a tradition, and a celebration of the land itself.
At Manvitha Mana Oori Ruchulu, Gongura Mutton is our most-ordered dish. Families drive from Nellore, Tirupati, and even Chennai specifically for it. And the reason is simple: we grow our own gongura on our 100-acre farm, and we use country mutton that is slow-cooked for hours with in-house ground masalas.
What is Gongura?
Gongura (also called sorrel or Ambadi in Hindi) is a leafy green plant with a distinctly sour, tangy flavour. It grows abundantly in Andhra Pradesh and Telangana, and it is the backbone of many Telugu dishes — chutneys, pickles, dals, and of course, the legendary Gongura Mutton.
The sourness of gongura comes from oxalic acid, which gives it a bright, citrus-like tang. When cooked with mutton, it tenderises the meat and creates a gravy that is unlike anything else in Indian cuisine.
Why Farm-Grown Gongura Makes All the Difference
Most restaurants buy gongura from the market. We grow ours.
On our 100-acre organic farm in Nellore district, we cultivate red-stemmed gongura — the most flavourful variety. It is harvested fresh every morning and brought directly to our kitchen. No cold storage. No wilting. Just leaves that are alive with flavour.

The Manvitha Gongura Mutton — How We Make It
Ingredients (Serves 4)
- 750g country mutton (bone-in pieces)
- 3 large bunches fresh gongura leaves (stems removed)
- 3 medium onions, finely sliced
- 4 green chillies, slit
- 1 tbsp ginger-garlic paste
- 2 tsp red chilli powder
- 1 tsp turmeric powder
- 1.5 tsp coriander powder
- 1 tsp cumin powder
- Salt to taste
- 4 tbsp oil (preferably groundnut oil)
- Fresh coriander for garnish
Step 1 — Prepare the Gongura
Wash the gongura leaves thoroughly. Blanch them in boiling water for 3 minutes, then drain and blend into a coarse paste. Do not make it too smooth — a little texture is essential.
Step 2 — Brown the Mutton
Heat oil in a heavy-bottomed vessel. Add the mutton pieces and sear on high heat until browned on all sides. This step is critical — it locks in the juices and adds depth to the gravy. Remove and set aside.
Step 3 — Build the Masala Base
In the same vessel, add sliced onions and fry until golden brown. Add green chillies and ginger-garlic paste. Cook for 3–4 minutes until the raw smell disappears. Add all the dry spice powders and cook for another 2 minutes.
Step 4 — Slow Cook Together
Return the mutton to the vessel. Add the gongura paste and mix well. Add half a cup of water, cover, and cook on low heat for 45–60 minutes, stirring occasionally. The mutton should be completely tender and the gravy thick and clinging.
Step 5 — Finish and Serve
Adjust salt. Garnish with fresh coriander. Serve hot with steamed rice, ragi mudde, or jowar roti.
