What is Vanjaram Fish?

Vanjaram is the Telugu name for Seer fish, also known as King Mackerel (Scomberomorus commerson). It is one of the most prized fish in Andhra Pradesh and along the entire eastern coast of India.

Vanjaram is a large, firm-fleshed fish with a mild, slightly sweet flavour. Its firm texture makes it ideal for frying — it holds together beautifully in the pan and develops a crispy crust without falling apart. The flesh is rich in natural oils, which keep it moist and flavourful even after frying.

In Nellore district, Vanjaram is caught in the Bay of Bengal and brought to market fresh every morning. The best Vanjaram Fish Fry is always made with fish that was swimming in the sea the same morning.

What Makes a Great Vanjaram Fish Fry?

There are three things that separate an outstanding Vanjaram Fish Fry from an ordinary one:

1. Fresh Fish — Not Frozen

This is non-negotiable. Frozen Vanjaram loses its natural oils and firm texture during freezing. When fried, it becomes dry and flavourless. Fresh Vanjaram, by contrast, stays moist inside and develops a beautiful crust outside.

At Manvitha, we use only fresh Vanjaram sourced daily from local fishermen. We never use frozen fish.

2. The Masala — Thick, Spiced, and Well-Balanced

The masala coating is what gives Vanjaram Fish Fry its character. A great masala should be:

  • Thick — it should coat the fish completely, not run off
  • Spicy — Andhra fish fry is genuinely hot, not mildly spiced
  • Tangy — a touch of tamarind or raw mango powder balances the heat
  • Aromatic — whole spices ground fresh give depth that powder blends cannot

Our masala at Manvitha is ground in-house from whole spices — red chillies, coriander, cumin, black pepper, turmeric, ginger, garlic, and a touch of tamarind. It is our own blend, developed over years of cooking, and it is what makes our Vanjaram Fish Fry taste the way it does.

3. The Fry — Shallow, Not Deep

Vanjaram Fish Fry should be shallow-fried, not deep-fried. Shallow frying in a cast-iron pan with a generous amount of oil gives the fish a crispy, slightly charred crust while keeping the inside moist. Deep frying produces a uniform crust but loses the caramelised, slightly smoky character that makes a great fish fry.

At Manvitha, we shallow-fry our Vanjaram in a heavy cast-iron pan, turning it once, until the crust is deep red and crispy on both sides.

The Manvitha Vanjaram Fish Fry: How We Make It

Here is how we prepare Vanjaram Fish Fry at Manvitha:

Step 1: Selecting the fish. We use thick, centre-cut slices of fresh Vanjaram — approximately 2 cm thick. The thickness ensures the fish stays moist inside while the outside crisps up.

Step 2: The marinade. We coat the fish generously with our in-house masala paste — red chilli, coriander, cumin, black pepper, turmeric, ginger, garlic, tamarind, and salt, ground together with a little water into a thick paste. The fish is left to marinate for at least 30 minutes.

Step 3: The fry. We heat a cast-iron pan with a generous amount of oil until it is very hot. The marinated fish slices go in and are left undisturbed for 3–4 minutes until the bottom crust is deep red and crispy. We turn once and fry the other side for another 3 minutes.

Step 4: The finish. We serve the fish immediately, straight from the pan, with sliced onions, lemon wedges, and green chutney.
