Andhra biryani is cooked in a sealed clay pot using the dum method — raw marinated meat and partially cooked rice layered together and slow-cooked over a wood fire. The result is rice that is infused with the flavour of the meat from below, and meat that is perfumed with the aroma of the rice from above.
What to look for: The pot should be sealed with dough (not foil), the rice should be long-grained and separate, and the spice level should be genuinely hot.
3. Natukodi Chicken Curry
Country chicken (Natukodi) slow-cooked in a rich, spicy gravy. The firm texture and deep flavour of free-range country chicken makes this dish incomparably better than the same recipe made with broiler chicken.
What to look for: The chicken should be bone-in, the meat should have a firm texture (not mushy), and the gravy should be dark and concentrated.
4. Vanjaram Fish Fry
Vanjaram (Seer fish / King Mackerel) marinated in a spicy red masala and shallow-fried until crispy on the outside and moist inside. This is the definitive Andhra coastal fish dish — simple, bold, and perfect.
What to look for: The fish should be fresh (not frozen), the masala coating should be thick and well-spiced, and the fry should be crispy without being dry.
5. Prawn Masala
